California Pizza Kitchen Gluten Free Pizza

I finally got to try this tonight, thanks to them recently adding gluten free pizza's to the menu!  I decided to get the White Cheese Pizza with tomatoes, there was so many to choose from.  There are a few they cannot do gluten free like the Thai Chicken.  I was not charged extra for the gluten free crust, excellent bonus!

It was very tasty, I almost ate the whole thing, loved the four white cheeses, and the whole tomatoe slices.  The crust was done just the way I like it, a bit crispy on the edges, but that is what I like, it has been a while since I had a pizza with crispy crust instead of soggy and falling apart, cant wait to go back some day to try another kind.

Gluten Free Blueberry Muffins

I had a bunch of blueberries I needed to use and found this recipe on another blog, turned out well, my son and husband ate them too:)



Blueberry MuffinsMakes 12 muffins

2 cups brown rice flour mix (see below)
2/3 cup granulated sugar
1 tablespoon baking powder
1 teaspoon baking soda
¾ teaspoon xanthan gum
¼ teaspoon salt
¼ - ½ teaspoon nutmeg (to taste)
1 ½ cups unsweetened fresh blueberries (I used frozen, undefrosted)
½ cup milk (I used vanilla flavored almond milk)
½ cup canola oil
2 large eggs
½ teaspoon pure vanilla extract
Cinnamon sugar for garnish or optional streusel topping (I used the streusel topping)

Preheat oven to 375 degrees. Position rack in center of oven. Spray muffin pan with cooking spray.
Mix flour, sugar, baking powder, baking soda, xanthan gum, salt, and nutmeg in large mixing bowl. Add blueberries; stir to coat evenly.

Combine milk and oil in small bowl; remove 1 tablespoon of combined liquid and discard it. Beat in eggs and vanilla. Add liquids to blueberry mixture and stir until just blended.
Fill muffin pans 2/3 full. Sprinkle top with cinnamon sugar or streusel topping. Bake 18 – 25 minutes until lightly golden. Remove muffins from pan and serve immediately or cool on a rack.

Streusel Topping
½ cup brown rice flour mix
1/3 cup brown sugar
½ teaspoon cinnamon
¼ teaspoon xanthan gum
3 tablespoons unsalted butter, melted

Combine flour, brown sugar, cinnamon, and xanthan gum in a small bowl; stir to blend. Pour in butter and stir until all dry ingredients are moistened. Break into small pieces with spoon.

Brown Rice Flour Mix2 cups brown rice flour (extra finely ground)
2/3 cup potato starch (NOT potato flour)
1/3 cup tapioca flour
Total: 3 cups

El's Gluten Free All Natural Zesty Medley Mix and Bagel Snaps

Thanks to http://www.elskitchen.com/ for sending me these samples.

I opened the bagel chips snaps first, I miss my bagel chips, these were tasty, have a little zing to them, great with some dipping sauce or salsa.

Next I tried a Zesty Mix Medley, yummy!  I can't seem to put this bag down, I could eat the whole bag in one sitting.  It reminds me of chex mix, but more delicious with a great spice to it. Includes pretzels, corn nuts, potato chips,and corn chips.  These would be great to put in a dish for a party too(if your willing to share), or for camping or travel.   And good for you too.

The Original Pancake House

Yeah, got to try some gluten free pancakes here yesterday.  I got the banana ones, very good, and plenty on the plate, even had left overs!  It was nice to be able to go out to breakfast with the family.  This was the Brookfield, WI location.  Check your local one to see if they offer gluten free

Kitchen Table Bakers Review

I had the pleasure of trying some samples from Kitchen Table Bakers.  I had the Aged Parmesan Mini Crisps and the Regular Crisps.

Their logo is "The crisp made entirely of cheese", so you must be a cheese lover. 

These are
wheat free
gluten free
sugar free
rich in calcium
low in carbs

Ingredients
Aged Paremesan Cheese
skim milk
cheese cultures
salt

Very simple, and very good.  The larger crackers have sesame seeds also, these are very rich, great for soups or salads.  I prefer the mini crackers as the taste was not as strong as they are smaller.  My son loved both of them. These would also be great to set out for a party with wine.

  • Oils that have been used to deep fry battered foods will contaminate foods like French fries. Use separate oils, and ask the chef when dining out if the same oil is used for battered foods.
  • Cutlery, utensils and potsand pans must be thoroughly cleaned before cooking gluten-free to avoid cross-contamination.
  • Toasters and ovens that have been used for glutenous breads can contaminate gluten-free breads. At home try to keep two separate toasters.
  • Grills and barbecues can easily cross-contaminate foods if not properly cleaned. Many sauces used to barbecue have gluten.
  • Sifters used for both glutenous and gluten-free flours will cross-contaminate. At home if you use both types of flour, keep separate properly labeled sifters.
  • Your mayonnaise, peanut butter jar, jams and jellies are easily contaminated when making sandwiches.
  • Glutenous flours have a tendency to stay airborne for some time after use. Cooking in a kitchen shortly after preparing foods with glutenous flours is risky for the sensitive person. Because of this I find it very hard to believe that you can get a truly gluten-free pizza from a pizza restaurant that makes regular pizza as well.
  • Any foods not prepared in a gluten-free facility, including your own home, runs the risk of getting cross-contaminated.
