Rudi's Multigrain Bread

I have been hearing a lot of buzz about Rudi's gluten free breads. Since my local grocer does not carry the gluten free varieties they were nice enough to send me a few samples.  Multigrain and Cinnamon Raisin.  Tried Multigrain for lunch today.  I was a bit skeptical, as I am not a huge Multigrain Bread fan, and being gluten free, I wasnt't sure what to expect.

Honestly I was very happy with it, I made myself an egg sandwich, and the texture and taste was wonderful, I really enjoyed it, it didn't taste 'grainy' like some breads can.  This one is definetely a keeper.  For more information on Rudi's breads go to http://www.rudisbakery.com/.

Namaste Spice Cake Review

I needed another cake for a birthday, and decided to try the Namaste Spice Cake. I chose to put Cream Cheese Frosting on it from Betty Crocker which is Gluten Free on the label.



This turned out very moist and was so easy to make, I love the spice flavoring which is the cinnamon, nutmeg, and cloves.  For variety add shredded carrots.  This makes two small round cakes or one 9 by 13, so it is large.

The Grainless Banker Hoagie Bread

I was very excited to be able to eat some type of sub sandwhich, it had been a long time.

I took the Hoagie from The Grainless Baker and had it sit out for an hour or so, then put it in the microwave for 30 seconds, and I was able to again eat a sub sandwich with my family.  I wasnt sure what to expect after being frozen.  I was happily suprised, this was VERY good bread, tasted the sub sandwiches I remember. It crumbles a bit, but for the most part stays together and is the perfect consistency.

If you are craving a sub sandwich I highly recommend these.

Made this for dinner last night with some potatoes.  I used chicken breasts, and followed the recipe on the back of the box.  It came out perfect, even my children and husband enjoyed it.  It was like a larger chicken nugget for the kids.  The coating was a great consistency and taste, came out just right.

So, I am on a new kick of having a smoothie every morning and I love them.  Here is the recipe I have been using.

1 cup coconut milk

1/2 cup melon cut up ( I use cantaloupe and musk melon, comes frozen in a bag)

1/2 cup berry mix from costco (rasperry, blueberry, and marionberry)

1 tsp honey

Blend and enjoy!

French Meadow Bakery Chocolate Cake Yummy!

I received this thanks to the good people at French Meadow Bakery, I froze it for a few weeks, and it was terrific.  I thawed it out in the morning and it was ready for my son's birthday party later that evening.  My brother and I are both gluten intolerant so we had it in place of the real cake.

I must say for me the frosting was the best part, real fudgy, tastes like it was just made the same day! I am a frosting lover, and it was layered well.  The cake part was good, semi moist.  My brother enjoyed the cake better, as he isn't a frosting lover.

This is perfect to pick up for those special occasions, especially when you are real busy.  Even great to freeze! My local Sendik's carries this cake, along with the cupcakes also.

Gluten Free For Oreo Lovers

Ok Oreo fans, I have a wonderful cookie for you. It is gluten, dairy, and nut free!  My son and I sampled them last night, as you can tell he is a fan.  It tasted like an oreo, chocolate cookie with a vanilla filling, so if you are missing Oreos, these are for you.  Great for dunking too.

I really enjoyed the Apple flavored rice cakes, they have the perfect crunch, and a slight apple flavoring.  I put peanut butter on top and had a great snack.







Next I tried the Cheddar Bites, they are airy inside and have a great taste.  They kind of reminded me of a slight pizza flavoring.  My toddler enjoyed them also, and shared the bag with me.  I wish they would make them in a bigger bag as these would be good to crumble in soup or salads also.

The Grainless Baker Cheese Crackers

These crackers are fabulous!  Thanks to a tip from a follower or two I received a few samples from this great company.  I really like these cheese crackers, only problem is I like them too much.  I was really missing the Cheeze its,  and now found an even better substitute.  They have a little zing to them which I love too.

They are nice and small and are perfect for your kids too.  Only problem is I wish they made a bigger box, as these will go fast.  They also make graham crackers the same size as these, can't wait to try them.

Namaste Gluten Free Pasta Pisavera Review and Giveaway

Thanks to the good folks at Namaste Foods I tried Gluten Free Pasta Pisavera tonight for dinner.  It is a delicious Italian Pasta Dish.  This recipe is very versatile.  I decided to add some of Amy's gluten free chicken meatballs cut up I got from Costco over the weekend, and some cut up tomatoes.

The instructions say you can also add red or green peppers, sun-dried tomatoes, onions, olives, etc. make it your own.  It also includes an Italian Summer Pasta Salad recipe. 

Our fine foods contain no wheat, gluten, corn, soy, potato, dairy, casein, tree nuts or peanuts




This was very easy to make.  I did have to add a bit more oil when adding more ingredients.  Maybe you could try adding some butter too.  I think some parmesan cheese on top would be lovely also.  It has a bit of a spicy kick to it, which was a nice change, the noodles were a very good consistency also.  I suggest you try some today!

Gluten Free Blueberry Muffins from Living Without

Banana Blueberry Muffins

Makes 15 muffins

This recipes uses coconut oil, a healthy alternative to the hydrogenated fats and butter found in many baked goods.

    2 ¾ cups gluten-free flour blend
    2  tablespoons coconut flour
    2  tablespoons cream of rice cereal
    ¼  cup modified tapioca starch, optional
    3 ½ teaspoons baking powder
    ¼  teaspoon xanthan gum
    ¼  teaspoon salt
    ¾ cup organic sugar
    1  cup fresh blueberries*
    2  tablespoons extra virgin coconut oil
    1  cup warm coconut milk (mix well before measuring)
    2  medium-large ripe bananas, mashed
    -  Cinnamon sugar or organic unsweetened shredded coconut, optional
1. Preheat oven to 350 degrees. Lightly grease muffin tins or use muffin liners and lightly spray with cooking oil.
2. Mix together gluten-free flour blend, coconut flour, cream of rice, modified tapioca starch, baking powder, xanthan gum, salt and sugar.
3. Gently fold in blueberries.
4. Make a well in the batter and pour in coconut oil, coconut milk and mashed banana. Blend but don’t over-mix.
5. Pour batter into prepared muffin tins. Sprinkle with cinnamon sugar or shredded coconut, if desired.
6. Bake about 20 minutes until muffin tops are golden and a sharp paring knife inserted in center comes out clean and hot to the touch.
7. Cool 10 minutes. Remove from pan and cool completely.
TIP Not crazy about coconut? Replace coconut flour with rice bran or gluten-free oat flour. Replace coconut oil with vegetable oil or margarine of choice. Replace coconut milk with milk of choice.
*TIP  You can also use frozen blueberries. Don’t defrost before adding to recipe

Zing Bars Gluten Free

I recently received a sample of these bars, and really like them.  There are six different flavors.  I have tried the Peanut Butter Chocolate  and the Blueberry Almond so far. (A nice strong almond flavor)  They are both delicious, but my personal favorite is the Peanut Butter Chocolate. This bar has 13 grams of protein, and is coated with dark chocolate. A great nutrition bar to have before my dog walking.

A Great on the go snack to take to work, before a workout, or a midday snack.

These are also soy free.

The Story of Zing Bars
It all started innocently enough. As practicing nutritionists, we simply wanted to find a good nutrition bar we could recommend to our patients. Chicken and Broccoli Alfredo

A favorite of mine, here is a recipe I used tonight

1/2 cup of linguine(I used Ancient Harvest)
1 cup frozen or fresh broccoli
2 tbsp butter
1 pound chicken breasts cut into strips
1 can Progresso Mushroom soup
1/2 cup milk
1/2 cup grated Parmesan
1/4 tsp. ground black pepper

Prepare linguine.  Add broccoli during last five minutes of cooking.  Drain and set aside.

Heat butter in skillet.  Add chicken and cook until browned.

Stir soup, milk, cheese, black pepper, and linquine mixture into skillet.  Cook until hot and bubbly.  Garnish with Parmesan cheese.  Enjoy!

Wellaby's Smoked cheese Cheese Ups

I tried this sample bag today and I loved the smoked flavor, and the crispiness of these.  They are hollow inside, and with a little help from my son, I managed to finish the whole bag.  A nice light snack.  The only thing I wish is that there were not so many broken pieces, maybe they would stay together better in a box instead of a bag.  For you smoked cheese lovers grab some today!

Asthma linked to Celiac

NEW YORK (Reuters Health) - People with the digestive disorder known as celiac disease are more likely to develop another disorder involving the immune system: asthma, according to a new study.
Specifically, a group of European researchers found that people with celiac disease were 60 percent more likely to develop asthma, relative to those without celiac.
Indeed, for every 100,000 people with celiac disease, 147 will have asthma that would not have occurred in the absence of the digestive disorder.
Those diagnosed with asthma were also more likely to eventually develop celiac disease, the authors report in the Journal of Allergy and Clinical Immunology.
Celiac disease is caused by an abnormal immune response to gluten, a protein found in wheat, rye, barley and other foods. The reaction keeps sufferers from eating foods like cereal, pasta, cookies and beer.
It occurs in about 1 percent of the population, and can lead to severe health problems including low blood count, poor bone health, fatigue, and weight loss.
To investigate whether celiac had any association with asthma, Dr. Jonas Ludvigsson of Orebro University Hospital and the Karolinska Institutet in Sweden and colleagues compared more than 28,000 Swedes diagnosed with celiac to more than 140,000 similar people without the disease.
Ludvigsson cautioned that the study simply shows an association between the two diseases, not that one causes the other.
It's also unclear, he added, what might explain the association. "Personally, I think the role of vitamin D deficiency should be stressed," he told Reuters Health by email.
People with celiac are more likely to develop osteoporosis and tuberculosis, both diseases in which vitamin D plays a role. If a person with celiac also has low levels of vitamin D, this could in turn affect the immune system, which could increase the risk of developing asthma, Ludvigsson noted.
"Another potential mechanism could be that asthma and celiac disease share some immunological feature," he added. "If you have it, you are at increased risk of both diseases."
People diagnosed with celiac are advised to follow a gluten-free diet, and it's not known whether the 28,000 people included in the study stuck to the diet or not, Ludvigsson added.
"Generally dietary compliance is high in Sweden, so I actually believe that also patients with good adherence are at increased risk of asthma," he said.

Wellaby's Classic Cheese Crackers

I opened up this sample box today, and they look like gourmet crackers.  These are thick and great for putting cheese or any other topping on.  They are crisp and delicious, just a hint of cheese, not too cheesy.  It is so nice to have a gluten free cheese cracker again this is enjoyable.  Great for the whole family, so if you don't want to share, hide them:)
