Glee Gum

                 Thanks to the great folks at Glee Gum, I was able to try a variety of samples.


My favorite is cinnamon, with peppermint coming in a close second.

The little pieces remind me of chicklets gum.  It is so nice to find a gum I know is safe and doesnt contain a lot of icky stuff.  This gum is also aspartame free, yeah!
The flavor does fade a bit fast, but I normally don't chew gum real long anyway.  Two pieces is better.

Good Article on Movie Popcorn

Last time I went I popped my own, put olive oil, garlic herbs, and parmesean cheese in, very good, stuck it in my purse and was good to go,  most places allow you to bring your own food if you have an allergy

is gluten free. Todd Sunderhaus,
flavor technologist for Gold Medal, said
the company’s manufacturing facility is
gluten free and that all ingredients are
checked for allergens. When it comes to
gluten, the company has a zero tolerance
policy, Sunderhaus said.
Gold Medal does sell some products
that contain wheat, including funnel cake
and waffle cone mixes, but they are made
by outside companies and stored in a
separate room in the company’s warehouse.
“All the popcorn is gluten free,” Sunderhaus
said. “There is no issue or question
about that.”
Several major movie theater chains
also confirmed that their popcorn is
gluten free. Regal Cinemas, the largest
movie theater chain in the US, also sells
pop corn with butter topping that is gluten
free, according to marketing manager
Richard Grover. Regal has 552 theaters
in 39 states and Washington, D.C.
The butter topping at all 350 AMC
theaters in 30 states and Washington is
gluten free, according to Sun Dee Larson,
director of external communications.
Likewise, the popcorn in all Cinemark
theaters is gluten free, said James Meredith,
vice president of marketing and communications.
Cinemark has 289 theaters
in 38 states.
If the economy has you planning to
watch more movies at home, you’ll be
happy to know that most microwave popcorn
is gluten free. Read the label to be
sure.
If you really want to save money, you
can buy regular popcorn kernels in a plastic
bag for a fraction of the cost of prepackaged
microwave popcorn.
You can use the kernels to make
homemade microwave popcorn simply
by putting a quarter cup of popcorn and
salt or other seasoning to taste in a plain
brown lunch bag. Add 1 teaspoon of
olive or vegetable oil. Fold the top of the
bag over and staple it twice (No, the staple
will not ignite in the microwave. You
can also fold the top of the bag over
twice and skip the staples.) Gently shake
the bag and lay it down in the micro -
wave. Set the time from two to three
minutes depending on your microwave,
but stay there and remove the popcorn
when there are three to five seconds
between pops.
Some recipes for homemade micro -
wave popcorn omit the oil, which would
cut the fat content, but might also affect
the taste.
You can also make popcorn the oldfashioned
way. Pour just a bit of oil into
the bottom of a pot, add some popcorn
kernels, put the lid on the pot and turn
the heat to medium high. Shake the pan
when it starts popping or the popcorn
will scorch and burn. Stay near the stove.
Turn off the burner when there are three
to five seconds between pops and leave
the top on for a minute or two so the
kernels settle.
If you are feeling a bit nostalgic try
Jiffy Pop—it’s gluten free. This is the
brand that comes complete with oil and
kernels already in an aluminum pan. I
remember my parents making it on the
stove when I was a kid and it seemed like
sheer magic when the popcorn would
bubble up into a big silver ball.

Movie theater popcorn is one
of my guilty pleasures. I have
always assumed it is gluten free but
wanted to know for sure. I hope I can
continue to enjoy this treat when I go
to the movies.

Mashed Potatoes Recipe

Favorite for Thanksgiving

  • 4 pounds red-skinned potatoes, unpeeled, quartered

  • 1/2 cup (1 stick) unsalted butter, cut into pieces
  • 1 cup finely chopped onion
  • 3 tablespoons finely chopped garlic

  • 1 cup whipping cream

Preparation

Cook potatoes in large pot of boiling salted water until tender, about 20 minutes. Drain. Return to pot.
Meanwhile, melt 1/4 cup butter in large skillet over medium heat. Add onion and sauté until translucent, about 3 minutes. Add garlic and sauté until tender, about 3 minutes.
Add onion-garlic mixture to potatoes. Add cream and remaining 1/4 cup butter; mash coarsely. Season to taste with salt and pepper and serve.

king soba Noodles Review Pumpkin Ginger and Rice

king soba was kind to send out some samples to review.  I started with the pumpkin, ginger and rice noodles.

I was thrilled they come wrapped individually inside according to serving size. Just wish it had a zipclose feature.


These were delicious, they only take 4-5 minutes to cook, make sure you dont go longer or they will fall apart.
I added olive oil, salmon, and some herbs to it, and it was a perfect me for me.

Starfish Cod Gluten Free Review

Are you missing a good breaded fish?  Thanks to Starfish I was able to try the Cod for lunch today.  The breading was very good, I enjoyed it with a bean salad, and some salad dressing . This would also be great in a fish sandwhich.  My son really enjoyed it also.  It came with 6 pieces in the box.  I found this product at Whole Foods for I believe 6.99 a box.  They also have Haddock and Halibut which was 9.99 a box. 


This product is gluten, wheat, soy, milk, and egg free, plus 0 trans fat.

Venice Bakery Review Gluten Free Focaccia Bread

Thanks to the great folks at Venice Bakery they sent me a box of wonderful product to try. The first one I tried is the Focaccia Bread.  I put a little cheese on it and it came out perfect.  Very flavorful, I dipped it in garlic and olive oil, would be great to dip with spaghetti or chili, or use as a pizza crust.

salt(I also use garlic salt) to your liking

Put them on a cookie sheet and roast in oven at 375 for about 40 minutes, and enjoy!

Enjoy Life Seed and Fruit Mix

Thanks to the good people at Enjoy life they sent me a few samples of this new product. What a great product, it is free of the 8 most common allergies.  Being wheat, dairy, peanuts, tree nuts, egg, soy, fish, and shellfish.

I opened up the Beach Bash which includes sunflower kernels, pineaple, pumpkin seeds, cranberries and apricots. In one word, delicious!  Besides sunflower oil, citric acid, and salt, these are the only ingredients in here.  These are also sulfite free, and made in a certified gluten free facility. 

Great for eating on the run, taking on a hike, a trip, etc.  I have to say my son enjoyed it very much too, he wanted all the pineapple:)

No Crust Apple Pie= yum!

I had a bunch of apples to use up, so I decided to try this pie, it was delicious and enjoyed by everyone! Easy to make, this was my first apple pie I tried gluten free, so pleasantly surprised



Ingredients

    1. 4 -5 medium apples ( peeled, cored, and sliced)
    2. 1 1/4 cups sugar ( divided)
    3. 3 teaspoons cinnamon
    4. 3/4 cup butter or 3/4 cup margarine
    5. 1 cup flour
    6. 1 eggs

Directions

  1. Preheat oven to 350.
  2. Fill pie pan 3/4 full with apples.
  3. Mix 1/4 cup sugar and 3 tsp cinnamon.
  4. Sprinkle over apples.
  5. In saucepan, melt butter and remove from heat.
  6. Add remaining ingredients (including the 1 cup of sugar remaining).
  7. Pour evenly over the apples in pan.
  8. Bake 45 minutes.

Thanks to the good folks at Eden Foods I was able to sample this for lunch today.  It looked delicious and tasted that way too.  I ate some of it by itself, some with tortilla chips, and also put some on a gluten free roll.  This would also be great wrapped in some corn tortillas.  My son also ate a bit of it for lunch.  It has a bit of a kick to it, but just enough to make it tasty, not too spicy. 





I love that the cans are BPA free!  Also, this is organic another plus!

Sofella Foods Gluten Free Brownies/Cake Review

Thanks to Sofella Foods I was sent a few samples to try.  I decided to make chocolate chip brownies with their cake mix.  They sent me a few sample recipes, so it was easy to follow.  I took the suggestion of greasing the pan and using parchment paper, these turned out so good!  They were like cake brownies.  The sides were not hard or cripsy at all which usually happens to me when making brownies.  Now to restrain myself from eating the whole thing, lol.

I received a sample of this pudding today, and it is delicious!  A nice portion and a great snack. It is great to find a pudding that is dairy and gluten free, a hard find. They also have vanilla and other flavors.

Wisconsin State Fair

California Pizza Kitchen Gluten Free Pizza

I finally got to try this tonight, thanks to them recently adding gluten free pizza's to the menu!  I decided to get the White Cheese Pizza with tomatoes, there was so many to choose from.  There are a few they cannot do gluten free like the Thai Chicken.  I was not charged extra for the gluten free crust, excellent bonus!

It was very tasty, I almost ate the whole thing, loved the four white cheeses, and the whole tomatoe slices.  The crust was done just the way I like it, a bit crispy on the edges, but that is what I like, it has been a while since I had a pizza with crispy crust instead of soggy and falling apart, cant wait to go back some day to try another kind.

Gluten Free Blueberry Muffins

I had a bunch of blueberries I needed to use and found this recipe on another blog, turned out well, my son and husband ate them too:)



Blueberry MuffinsMakes 12 muffins

2 cups brown rice flour mix (see below)
2/3 cup granulated sugar
1 tablespoon baking powder
1 teaspoon baking soda
¾ teaspoon xanthan gum
¼ teaspoon salt
¼ - ½ teaspoon nutmeg (to taste)
1 ½ cups unsweetened fresh blueberries (I used frozen, undefrosted)
½ cup milk (I used vanilla flavored almond milk)
½ cup canola oil
2 large eggs
½ teaspoon pure vanilla extract
Cinnamon sugar for garnish or optional streusel topping (I used the streusel topping)

Preheat oven to 375 degrees. Position rack in center of oven. Spray muffin pan with cooking spray.
Mix flour, sugar, baking powder, baking soda, xanthan gum, salt, and nutmeg in large mixing bowl. Add blueberries; stir to coat evenly.

Combine milk and oil in small bowl; remove 1 tablespoon of combined liquid and discard it. Beat in eggs and vanilla. Add liquids to blueberry mixture and stir until just blended.
Fill muffin pans 2/3 full. Sprinkle top with cinnamon sugar or streusel topping. Bake 18 – 25 minutes until lightly golden. Remove muffins from pan and serve immediately or cool on a rack.

Streusel Topping
½ cup brown rice flour mix
1/3 cup brown sugar
½ teaspoon cinnamon
¼ teaspoon xanthan gum
3 tablespoons unsalted butter, melted

Combine flour, brown sugar, cinnamon, and xanthan gum in a small bowl; stir to blend. Pour in butter and stir until all dry ingredients are moistened. Break into small pieces with spoon.

Brown Rice Flour Mix2 cups brown rice flour (extra finely ground)
2/3 cup potato starch (NOT potato flour)
1/3 cup tapioca flour
Total: 3 cups

El's Gluten Free All Natural Zesty Medley Mix and Bagel Snaps

Thanks to http://www.elskitchen.com/ for sending me these samples.

I opened the bagel chips snaps first, I miss my bagel chips, these were tasty, have a little zing to them, great with some dipping sauce or salsa.

Next I tried a Zesty Mix Medley, yummy!  I can't seem to put this bag down, I could eat the whole bag in one sitting.  It reminds me of chex mix, but more delicious with a great spice to it. Includes pretzels, corn nuts, potato chips,and corn chips.  These would be great to put in a dish for a party too(if your willing to share), or for camping or travel.   And good for you too.

Kitchen Table Bakers Review

I had the pleasure of trying some samples from Kitchen Table Bakers.  I had the Aged Parmesan Mini Crisps and the Regular Crisps.

Their logo is "The crisp made entirely of cheese", so you must be a cheese lover. 

These are
wheat free
gluten free
sugar free
rich in calcium
low in carbs

Ingredients
Aged Paremesan Cheese
skim milk
cheese cultures
salt

Very simple, and very good.  The larger crackers have sesame seeds also, these are very rich, great for soups or salads.  I prefer the mini crackers as the taste was not as strong as they are smaller.  My son loved both of them. These would also be great to set out for a party with wine.

  • Oils that have been used to deep fry battered foods will contaminate foods like French fries. Use separate oils, and ask the chef when dining out if the same oil is used for battered foods.
  • Cutlery, utensils and potsand pans must be thoroughly cleaned before cooking gluten-free to avoid cross-contamination.
  • Toasters and ovens that have been used for glutenous breads can contaminate gluten-free breads. At home try to keep two separate toasters.
  • Grills and barbecues can easily cross-contaminate foods if not properly cleaned. Many sauces used to barbecue have gluten.
  • Sifters used for both glutenous and gluten-free flours will cross-contaminate. At home if you use both types of flour, keep separate properly labeled sifters.
  • Your mayonnaise, peanut butter jar, jams and jellies are easily contaminated when making sandwiches.
  • Glutenous flours have a tendency to stay airborne for some time after use. Cooking in a kitchen shortly after preparing foods with glutenous flours is risky for the sensitive person. Because of this I find it very hard to believe that you can get a truly gluten-free pizza from a pizza restaurant that makes regular pizza as well.
  • Any foods not prepared in a gluten-free facility, including your own home, runs the risk of getting cross-contaminated.

I had the opportunity to try these great candies.  I really enjoy the Iced Mint Mango, great flavor.  The Tropical Fruit is Sugar Free is also a nice candy.  It comes in Pina Colada, Peach Mango, Passion Fruit, and Strawberry Kiwi in one bag, great for carrying in your purse. These are gluten free and also have splenda instead of sugar.

Siesta Key/Sarasota Area

Have to give a shout out to http://www.islandgfbakery.com/, they had a wide variety of stuff for my vacation.  I tried the muffins and cookies. The chocolate chip muffins were to die for, so moist!  I received a list of places to eat too in the area.

I tried Dutch Valley Restaurant for a Father's Day breakfast, the waitress wasnt familiar with my diet, but they had a whole menu, another gal came to help.  I had eggs, potatoes, and cinnamon raisin toast.  Then took a few muffins to go for my long ride home.  Delicious!

I also tried Beckham's Osprey Grill for dinner one night, a little bit of a drive, in a small strip mall, very quiet and cute.  (Too bad my toddler didnt think so. ) When I finally did get  to order I decided to try a chicken alfredo dish with bacon and cheese sauce .    Very tasty, nice large portion, loved the bacon in it, I normally dont eat foods this rich, but nice to indulge once in a while.  They also carry gluten free buns I believe i you would like a burger or chicken breast.

I also tried the Boat House one night, thanks to my sil for watching the kiddos! They did not have a menu, but I ordered a plain chicken breast with lettuce and tomato, and got a salad, a nice meal. It was right on the water, there was a patio, but a wedding out there, so we sat in a 'indoor' type of patio seating, nice entertainment. 

Another place on the list was Cosimos Brick Oven Pizza, I didnt get to try that.

Gluten Free With DisneyWorld

Some of you may know this already, but DisneyWorld is THE best place to be if you have an allergy of any kind.  Before your trip even you can talk to DisneyWorld and they will suggest what to do, where to go, etc.

Downtown Disney First Night

We went to Wolfgang Puck's , the kids wanted pizza, and when I asked about gluten free the chef came right out and talked to me, he made up a delicious gluten free vegetable pasta dish, very friendly service.

For dessert I went to Baby Cakes and had a gluten free cupcake top, and got a cupcake to have another time, very yummy.


Animal Kingdom

They had pineapple bars that were sooooo good in the 90 plus degree weather.  I also ventured into the pizza place and they made up an Amy's gluten free pizza for me, this was so great, I just had to wait a bit longer for it, but no biggie.

Disney World

We had a reservation at Crystal Palace to see Pooh and friends.  The chef came right out and told me everything I could have, which was virtually everything but the breads and pastas, and some dressings, such a variety of choices.  I had rice noodles, fruits, veggies, salmon, cous cous, a salad with ranch dressing, mashed potatoes, ham, so many choices.  When I was finished I was brought a gluten free brownie, huge cut to the size of a pie piece.  Kuddos to Crystal Palace! 
The Mickey Mouse ice cream bars are gluten free.  The lunch buffet filled me up so much.  Great tip to go right before noon, a great relief from the heat, had to wait about 15 minutes to be seated.

While some of the people working the cash registers were not real familiar I did talk to the chefs, and they told me everything I could have.  Wide variety including mac and cheese(amys), Pizza(amy's), chicken tenders with fries(the parks have the tenders too), brownie, blueberry muffins, gluten free waffles and pancakes, hot dog or burger on a gluten free bun.

I chose chicken tenders and fries for my first meal as it was light, and I was sooo excited to eat fries;very tasty! Even had a rice flour coating I believe



For breakfast I chose the blueberry muffins.  I also had some fruit they sold individually. I wanted to try the gluten free pancakes, but never got around to it.   Again, allow extra time for the gluten free food, and great thing I wasnt charged extra.
